Hello friends! I’m coming to you today with a super helpful post. It’s actually one you requested the most…easy weeknight meals. One of the things I struggle with the most is cooking dinner every night. This has been a struggle since I was single and even now that I’m married with a baby.
When I was single, I hated cooking because I had a hard time making something for one and I hated eating the same thing every day as leftovers. There were many nights when I would eat cereal or popcorn. Now that I’m married with a baby it’s all about time. I want to be efficient and not spend all night cooking. After getting home from work and picking Lizzie up from daycare I might have an hour before we have a total meltdown.
Now don’t get me wrong, on a Saturday or Sunday I love to cook a more in-depth meal, like my braised short rib recipe (I’ll share that soon). But during the week it’s all about being efficient. Baby or no baby, I don’t want to spend all night cooking. There are other things I need to do, like straighten up the house, blogging or just hanging out with Mike.
Over the years I have found certain recipes work great for speed and also quantity. So I’m starting a new series, Easy Weeknight Meals. These meals are great for anyone in any point of their life timeline. If you are single, these are great because you can make it for dinner and take the leftovers for lunch. If you are married, they are quick and go perfectly with a glass of wine. And if you have kids they will love these meals too. Lizzie eats all of them!
Easy Weeknight Meals
All the recipes I will be sharing in this series have one thing in common, they are super easy. They take around 30-40 minutes to prep and cook. If you want to cut down on the prep time you can prep everything the night before and combine the ingredients when you are ready to cook. And they are fan favorites in my house. Even Lizzie eats them and loves them. She has a great appetite for a one year old!
Sausage and Roasted Veggies
This sausage and roasted veggies recipe is a favorite because you can put in anything you want. It’s a kitchen sink type of recipe. Meaning quantities and measurements are loose, you can add as much or as little as you want. For the sausage I use Polish kielbasa, however, you can use any type of sausage you want. You can also put as many or as little veggies in as well. This is a go-to meal when it’s a busy night.
Roasted Sausage and Veggies
Ingredients
- 1 LB Kielbasa (or any linked sausage)
- 1 Green Pepper
- 1 Onion
- 1 container Mushrooms
- 1 Zucchini
- 2 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tbsp Basil (fresh or dried)
Instructions
- Pre-heat oven to 425 degrees
- Slice sausage into 1/4 inch chunks
- Slice all veggies
- Lightly cover all ingredients in olive oil and balsamic vinegar
- Sprinkle in basil and salt and pepper to taste
- Spread onto a baking sheet
- Bake for 25 minutes or until roasted
