Looking for some easy summer cocktails? Look no further because today I’m sharing my favorite summer cocktails that feature mint. We recently set up our outdoor balcony which I call our Urban Oasis! I live downtown and have a slab of concrete so the name is fitting.
During the design process Mike wanted to grow fresh herbs on the balcony. Notice how I said Mike, and not we. Mike really wanted to create a beautiful space outside for us, and that included live plants and greenery. Consequently, it left us with a lot of fresh herbs.
I have no interest in anything outside the walls of my condo. I’m a true city gal! However, I do love that Mike put his heart and soul into creating the perfect balcony for us. I was pretty dead set on not having plants on the balcony. In my defense, I can barely take care of the inside of the house. In addition, I didn’t want to take care of anything on the outside of the house. It’s actually why I choose to live in a condo. Therefore, I want nothing to do with the outside of a home or even paying someone to do it for me. On the other hand, I’m so glad Mike got the fresh herbs for the balcony. We are growing basil, dill, parsley and mint. I use them for making my famous herbed butter and for garnishing cocktails!
Making a full blown cocktail really makes me feel like an adult. Being 39 I should already feel like an adult, but mixing cocktails really seals the deal for me. As an adult you also need to keep a clean kitchen. Having a few cocktails that don’t require a huge mess and clean up, yet are fancy, are ideal for my lifestyle.

Classic Mojito
Ingredients
- 1.5 oz lime juice (squeezed fresh)
- 1 tsp finely granulated sugar
- 3 mint leaves for drink, more for garnish
- 2 oz white rum
- club soda
Instructions
- Muddle 1 teaspoon of sugar, lime juice and mint leaves
- Fill the glass about 2/3 with ice and add rum
- Top it off with club soda
- Garnish with a lime and mint leaves and top off with club soda or seltzer
Old Maid
Ingredients
- 2 oz gin
- 1 oz fresh lime juice
- 3/4 oz simple syrup
- 3 slices cucumber (1/4 inch thick)
- 8 mint leaves
Instructions
- Combine all liquid ingredients into a shaker
- Add the cucumber and mint and slightly muddle
- Add ice and shake
- Strain drink into a glass
- Garnish with mint leaves
French Mule
Ingredients
- 3 oz Grand Marnier
- 1 can Ginger Beer
- 3 Mint Leaves
Instructions
- Fill your glass with ice
- Add Grand Marnier and ginger beer (3 oz is 2 shots add more or less to taste)
- Garnish with mint leaves
Southside Fizz
Ingredients
- 2 oz gin
- 3/4 oz fresh lemon juice
- 1 tsp super fine sugar or simple syrup
- 10 mint leaves
- club soda
Instructions
- Muddle mint leaves in shaker
- Add gin, lemon juice and sugar and stir to dissolve
- Add ice to the shaker and gently shake
- Strain into a glass and top with club soda
