Hello, hello! One of my most requested posts recently has been for easy weeknight meals. If you are following me on Instagram you know that I’m always sharing what I am cooking in my stories. The majority of the time they are quick and easy meals. I’m a working mom who wants to come home and spend time with my family so easy and quick is a meal requirement.
Today I’m sharing one of my favorite meals to dress up chicken. I’m a red meat eater, but have been trying to like chicken…it’s hard. It’s easier for me to like chicken when it’s dressed up a bit. Either with a marinade or covered in something like cheese 🙂 My go to chicken dish is Cornflake Chicken Fingers. They take less than 10 minutes to prep and about 25 minutes to bake. After you do it a couple times the prep time gets even quicker. Keep reading to see the full recipe.
My main side with the Cornflake Chicken Fingers is mashed potatoes. I know that mashed potatoes don’t sound easy or quick, but I have a secret. I use Lizzie’s Baby Brezza Glass One Step Food Maker (you can read my full post about it here). Sounds wild, but it’s so easy to use and there isn’t a huge mess. Lizzie is done with baby food and I like the appliance so I found a new use for it.

Cornflake Chicken Fingers
Ingredients
- 2-1/2 cups cornflakes (crushed)
- 1/2 cup flour
- 1 lb chicken breasts, boneless and skinless
- 2 eggs
- 1/2 tsp salt
- 2 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper
Instructions
- Preheat oven to 400 degrees
- Place flour in a bowl
- Place eggs (beaten) in a bowl
- Place crushed cornflakes, garlic, paprika and cayenne pepper in a bowl
- Place each piece of chicken in the flour, then eggs and roll into cornflake mixture
- Place each piece of chicken on a baking sheet, cook for 20 minutes or until golden
- Add dipping sauce of your choice, such as ranch, bbq or honey dijion
