This isn’t your average sad desk salad. It’s packed with shaved Brussels sprouts, salty pecorino Romano, and toasted walnuts—all tossed in a flavorful honey-garlic vinaigrette that you’ll want to drizzle on everything. Best part? It comes together in minutes and keeps well in the fridge, making it a perfect work from home lunch all week long.

Brussels Sprout Salad Recipe

Salad Ingredients:

  • 4 cups shaved Brussels sprouts
  • ¾ cup pecorino Romano cheese, grated
  • ½ cup walnuts, chopped and toasted

Dressing Ingredients:

  • ½ cup extra virgin olive oil
  • ¼ cup champagne vinegar
  • 2 tablespoons honey
  • 2 cloves of garlic, minced or smashed
  • ½ teaspoon ground black pepper

Instructions:

  1. In a large bowl, combine the shaved Brussels sprouts, pecorino Romano, and toasted walnuts.
  2. In a small jar or bowl, whisk together the olive oil, champagne vinegar, honey, garlic, and pepper until well combined.
  3. Pour the dressing over the salad and toss thoroughly to coat. Let it sit for 5–10 minutes to soften the sprouts slightly before serving.

This salad is hearty enough to stand on its own, but if you’re extra hungry, it’s delicious with a piece of grilled chicken or bacon on top. It also holds up well in the fridge, so go ahead and make a double batch—you’ll thank yourself tomorrow.
